  • 2 cups of bean sprouts, blanched
  • 2 cups of vermicelli noodles, cooked according to package instructions
  • 2 hard-boiled eggs, sliced
  • 2 tablespoons of fried shallots
Instructions:
  • In a pot, bring the water to a boil. Add the beef chunks and boil for 10 minutes, then reduce the heat and let it simmer for 2 hours or until the beef is tender.
  • In a dry pan, toast the coriander seeds and cumin seeds until fragrant. Let them cool and then grind them into a fine powder using a mortar and pestle or a spice grinder.
  • In a blender, blend the garlic, shallots, red chilies, and candlenuts into a smooth paste.
  • Heat the vegetable oil in a pan over medium heat. Add the blended paste, kaffir lime leaves, bay leaves, and lemongrass. Stir-fry until fragrant.
  • Add the spice powder, salt, and sugar. Stir-fry until well combined.
  • Add the spice mixture to the pot of beef and let it simmer for another 10 minutes.
  • To serve, place some bean sprouts, vermicelli noodles, and sliced hard-boiled eggs in a bowl. Ladle the hot soup over the top and garnish with fried shallots.
